So the taste of the latter one is better, similar to the ratio<em><\/em>nale of free-range chicken.<br \/>  \u725b\u809a\u6bd4\u7f8a\u809a\u8981\u539a\u5b9e\u4e9b\uff0c\u6240\u4ee5\u5982\u679c\u4f60\u60f3\u5403\u8106\u70b9\u7684\u5c31\u5e94\u8be5\u8981\u6563\u4e39\uff0c\u60f3\u6709\u70b9\u56bc\u5934\u7684\u5c31\u70b9\u767e\u53f6\u3002<br \/>  Ox tripe is thicker than lamb tripe, so if you would like crisp food, you&rsquo;d better order Sandan; on the contrary, if you like tough taste, Baiye is a better choice.<br \/>  \u5403\u7206\u809a\u7684\u6700\u9ad8\u5883\u754c\u662f\u5403\u809a\u9886\uff0c\u809a\u9886\u6bd4\u8f83\u91d1\u8d35\uff0c\u5f88\u5ae9\uff0c\u6bd4\u809a\u4ec1\u8fd8\u5ae9\uff0c\u636e\u8bf4\u8981\u597d\u51e0\u4e2a\u809a\u624d\u51fa\u90a3\u4e48\u4e00\u76d8\u3002\u7f8a\u7684\u809a\u9886\u8981\u628a\u5916\u9762\u7684\u76ae\u5265\u4e86\u5403\uff0c\u725b\u7684\u53ef\u4ee5\u76f4\u63a5\u7206\u3002\u8fd9\u4e2a\u809a\u9886\u7206\u7684\u706b\u5019\u4e5f\u5f88\u8bb2\u7a76\uff0c\u56e0\u4e3a\u592a\u5ae9\u4e86\uff0c\u6240\u4ee5\u706b\u5019\u7a0d\u5fae\u4e00\u5927\u5c31\u8001\u4e86\uff0c\u4e0d\u80fd\u5403\u4e86\u3002<br \/>  The supreme stage is having Duling which is expensive and tenderer than Duren. Reportedly, several stomachs could o<em><\/em>nly produce one dish. Duling of lamb should o<em><\/em>nly be eaten after peeling off the skin and that of ox can be fried directly. The degree of cooking matters a lot because the food is too soft. If cooked heavily, it is inedible.<br \/>  \u5403\u7206\u809a\u65f6\u4e00\u822c\u4e00\u53e3\u53ea\u5939\u4e00\u5757\uff0c\u8981\u62b9\u7740\u7897\u5e95\u6258\u7740\u9999\u83dc\u8471\u8638\u8d77\u8c03\u6599\u5165\u53e3\u3002\u540c\u65f6\u5403\u7206\u809a\u8981\u8bb2\u7a76&ldquo;\u9f7f\u611f&rdquo;\uff0c\u5982\u679c\u90bb\u5ea7\u7684\u4eba\u542c\u58f0\u97f3\u4ee5\u4e3a\u60a8\u5728\u56bc\u4e00\u5757\u5ae9\u9ec4\u74dc\uff0c\u90a3\u4e0d\u7528\u95ee\u4e86\u60a8\u5df2\u7ecf\u662f\u4e00\u4f4d\u5403\u7206\u809a\u7684\u8001\u884c\u5bb6\u4e86\u3002<br \/>  When having cooked tripe, you o<em><\/em>nly need to pick up one piece at a time and dip caraway and green o<em><\/em>nion at the bottom of bowl. In the meantime, &ldquo;feeling of tooth&rdquo; is also im<em><\/em>portant: if those at the nearby dining table believe you are chewing a tender cucumber when o<em><\/em>nly listening to the sound, you&rsquo;ve undoubtedly become an expert in eating cooked tripe.<br \/>  \u7f8a\u809a\u4ec1\uff0c\u98df\u5ba2\u620f\u79f0\u6b64\u83dc\uff1a&ldquo;\u767d\u5982\u5806\u96ea\u5ae9\u5982\u82b1\uff0c\u53eb\u6211\u5982\u4f55\u4e0d\u60f3\u4ed6\u3002&rdquo;\u9c9c\u5ae9\u5ae9\u7684\u809a\u4ec1\u4e0a\u684c\uff0c\u4e0d\u9700\u8981\u518d\u6dae\uff0c\u76f4\u63a5\u8638\u7740\u8c03\u6599\u5165\u5634\uff0c\u7b4b\u6597\u6613\u56bc\u3002\u7ec6\u7ec6\u95ee\u6765\uff0c\u624d\u77e5\u9053\u809a\u4ec1\u662f\u7f8a\u7684\u56db\u4e2a\u80c3\u4e2d\u67d0\u4e00\u6bb5\u7684\u9686\u8d77\u3002\u628a\u90a3\u4e00\u5c0f\u5757\u7247\u4e0b\u6765\uff0c\u6709\u56db\u4e24\u91cd\u3002\u518d\u53bb\u6389\u5916\u76ae\u53ca\u591a\u4f59\u7684\u7b4b\u8089\uff0c\u5c31\u5269\u4e0b\u4e00\u4e24\u91cd\u4e86\u3002\u6bcf\u4e00\u76d8\u809a\u4ec1\u9700\u89815\u53ea\u7f8a\u5de6\u53f3\uff0c\u53ef\u89c1\u73cd\u8d35\u3002<br \/>  Fans jokingly talk a<em><\/em>bout lamb Duren that &ldquo;it&rsquo;s as white as snow and as soft as flower, I couldn&rsquo;t help but missing it&rdquo;. When the tender Duren is served, it&rsquo;s unnecessary to be rinsed and you can dip in co<em><\/em>ndiment and then have the chewable food. After careful inquiry, we learned that Duren is a swell in four stomachs of lamb. The swell sliced from the stomach is 4 liang (50 grams), but after getting rid of surface and muscles, it is o<em><\/em>nly 1 liang. A dish needs 5 lambs, so its preciousness is easily understandable.<br \/>  \u5728\u65e7\u793e\u4f1a\uff0c\u4e00\u822c\u8001\u767e\u59d3\u5403\u7206\u809a\u5927\u591a\u662f\u5403\u767e\u53f6\u3001\u6563\u4e39\u4e4b\u7c7b\uff0c\u53ea\u6709\u7a77\u4eba\u4e4d\u5bcc\u6216\u8005\u4e0d\u90a3\u4e48\u6709\u94b1\u7684\u6709\u94b1\u4eba\u624d\u4f1a\u8981\u809a\u4ec1\u3001\u8611\u83c7\u6765\u5403\u3002\u4e0d\u8fc7\u73b0\u5728\u597d\u4e86\uff0c\u8fd9\u4e9b\u90e8\u4f4d\u6211\u4eec\u4e5f\u90fd\u53ef\u4ee5\u4eab\u7528\uff0c\u800c\u4e14\u7edd\u5bf9\u4e0d\u8d35\uff0c\u6700\u8d35\u7684\u8611\u83c7\u5c16\u4e0d\u8fc7\u662f\u5341\u6765\u5757\u94b1\u3002<br \/>  In old days, ordinary people always had Baiye and Sandan. o<em><\/em>nly those poor people getting rich suddenly or wealthy people who are not very rich ordered Duren and Mogu. But now, we lead a well-off life and can enjoy all these parts at an affordable price. The most expensive Mogujian costs o<em><\/em>nly a dozen yuan.<br \/>  \u4eac\u57ce\u6709\u51e0\u5bb6\u8001\u5b57\u53f7\u7206\u809a\uff1f<br \/>  How many famous shops do offer quick-fried tripe?<br \/>  \u7206\u809a\u4f5c\u4e3a\u5317\u4eac\u7684\u4e00\u79cd\u5730\u65b9\u540d\u5403\uff0c\u8f83\u65e9\u8bb0\u8f7d\u662f\u5728\u6e05\u4e7e\u9686\u5e74\u4ee3\uff0c\u4ee5\u6e05\u672b\u6c11\u521d\u65f6\u4e3a\u76db\u3002\u4ec5\u4e1c\u5b89\u5e02\u573a\u4e00\u5904\u6700\u591a\u65f6\u5c31\u6709\u4e03\u4e2a\u5356\u7206\u809a\u7684\u644a\u4f4d\u3002\u5f53\u65f6\u5356\u7206\u809a\u6700\u51fa\u540d\u7684\u6709\u4e1c\u5b89\u5e02\u573a\u7684\u7206\u809a\u51af\u3001\u7206\u809a\u738b\uff0c\u5929\u6865\u7684\u7206\u809a\u77f3\uff0c\u95e8\u6846\u80e1\u540c\u7684\u7206\u809a\u6768\uff0c\u4e1c\u56db\u724c\u697c\u7684\u7206\u809a\u6ee1\u7b49\u3002\u4ee5\u6d88\u8d39\u4eba\u7fa4\u4e0d\u540c\uff0c\u8001\u5317\u4eac\u7684\u7206\u809a\u5206\u4e1c\u5b89\u5e02\u573a\u548c\u5357\u57ce\u5929\u6865\u4e24\u6d3e\u3002\u5357\u57ce\u5929\u6865\u3001\u5927\u6805\u680f\u7684\u7206\u809a\u4ee5\u725b\u767e\u53f6\u53ca\u809a\u9886\u4e3a\u4e3b\uff0c\u5236\u4f5c\u4e0a\u8f83\u7c97\u653e\u3002\u800c\u4e1c\u5b89\u5e02\u573a\u7684\u7206\u809a\u51af\u5bb6\u3001\u738b\u5bb6\uff0c\u5236\u4f5c\u4e0a\u5c31\u7cbe\u7ec6\u5f97\u591a\uff0c\u4ee5\u7f8a\u809a\u4e3a\u4e3b\u3002\u65e9\u5e74\u7684\u5b98\u5ba6\u4eba\u5bb6\u3001\u516b\u65d7\u5b50\u5f1f\uff0c\u7279\u522b\u662f\u68a8\u56ed\u884c\u4eba\uff0c\u5747\u4ee5\u98df\u7206\u809a\u4e3a\u5feb\u3002<br \/>  As a famous dish in Beijing, quick-fried tripe was recorded earliest in the period under the reign of Emperor Qianlong of the Qing Dynasty, and peaked in the end of the Qing Dynasty and beginning of the Republic of China. Take Dong&rsquo;an Market alone as an example, there were 7 shops sold quick-fried tripe at most. Most well-known shops include the Baodu Feng, Baodu Wang at Dong&rsquo;an Market, Baodu Shi in Tianqiao, Baodu Yang in Menkuang Hutong and Baodu Man of pailou in Dongsi. The food in old Beijing was divided into two parts ba<em><\/em>sed on co<em><\/em>nsumption power: Dong&rsquo;an Market and Tianqiao in south Beijing. Those offered in Tianqiao and Da Shi Lan were mainly ox Baiye and Duling with extensive techniques. But the dish produced by Baodu Feng and Baodu Wang was more exquisite, mainly offering lamb tripe.
