Use tofu mayonnaise instead of mayonnaise in sandwiches and salads, or even as a condiment to go with tea eggs. Feel free to replace the cayenne with a small amount of chili paste.<\/p>\n<p>  \tThis recipe yields about 2 cups of tofu mayonnaise.<br \/>  \t<strong>Ingredients:<\/strong><\/p>\n<p>  \t1 pkg Superior Organic Silken Tube Tofu (240g)<br \/>  \t2 tbsp cider or white vinegar<br \/>  \t1 1\/2 tbsp Dijon-style mustard<br \/>  \t1\/8 tsp tumeric<br \/>  \t1 tsp honey or sugar (optional)<br \/>  \t1\/8 tsp cayenne (optional)<br \/>  \t2 tbsp olive oil (optional)<br \/>  \tSalt &#038; pepper to taste<\/p>\n<p>  \t<strong>Preparation:<\/strong><br \/>  \tBlend ingredients in a food processor or blender until smooth &#038; creamy. Salt and pepper to taste. Ready to serve. Use as a dairy-free sandwich spread or instead of mayonnaise to make an egg-free egg salad. Use to make other dressings\/dips. Store unused portions in a covered container\/jar and refrigerate.
