According to the China Tea Dictionary, &ldquo;tea washing is to wash away impurities on the surface of tea leaves and to express the aroma and taste of tea&rdquo;.<br \/>  \u636e\u5b66\u8005\u8003\u8bc1\uff0c&ldquo;\u6d17\u8336&rdquo;\u4e00\u8bcd\u59cb\u7528\u4e8e\u5317\u5b8b\uff0c\u6cbf\u88ad\u4e8e\u6ce1\u8336\u996e\u7528\u7a0b\u5f0f\uff0c\u539f\u5c5e\u4e8e\u8336\u53f6\u91c7\u5236\u8fc7\u7a0b\u7528\u8bed\uff0c\u540e\u5ef6\u4f38\u81f3\u996e\u7528\u8fc7\u7a0b\u4e2d\u3002<br \/>  ba<em><\/em>sed on research by scholars, the term &ldquo;tea washing&rdquo; originated in the Northern Song Dynasty, and it was used in the producing process of tea leaves in the first place and was later extended to the making process of tea.<br \/>  \u65b0\u9c9c\u8336\u53f6\u4ece\u8336\u6811\u4e0a\u91c7\u6458\u4e0b\u6765\u4ee5\u540e\u7ecf\u8fc7\u521d\u5236\u3001\u7cbe\u5236\uff0c\u5176\u4e2d\u6709\u591a\u9053\u5de5\u5e8f\u5982\u505a\u9752\u3001\u91dc\u7092\u3001\u63c9\u637b\u3001\u70d8\u7119\u3001\u7b5b\u62e3\u7b49\uff0c\u4e0d\u4ec5\u83b7\u5f97\u8336\u53f6\u54c1\u7ea7\uff0c\u800c\u4e14\u4e25\u683c\u4f9d\u7167\u4e86\u536b\u751f\u6807\u51c6\u3002\u5176\u4e2d\u5076\u6709\u5939\u6742\u7269\u5982\u8336\u7070\u3001\u5c18\u57c3\uff0c\u7ecf\u6ce8\u5165\u6cb8\u6c34\u5373\u5012\u6389\uff0c\u4e5f\u7acb\u5373\u53bb\u9664\u3002<br \/>  After being picked, fresh tea leaves are pretreated and finished, including several procedures like drying, fixation, rolling, baking, and selecting. Selecting is the process of grading the tea leaves and enforcing hygienic standards. In case of any impurity, e.g. dust or dirt, it is removed by infusing boiling water and then pouring out the tea.<br \/>  \u7b2c\u4e00\u6ce1\u8336\u7684\u64cd\u4f5c\uff0c\u4e3b\u8981\u662f\u8fdb\u884c\u6d78\u6ce1\uff0c\u6709\u5229\u4e8e\u8336\u53f6\u7684\u8212\u5c55\u548c\u8336\u6c41\u7684\u6d78\u51fa\uff0c\u4f7f\u996e\u7528\u8005\u5f88\u5feb\u611f\u89c9\u5230\u8336\u53f6\u9999\u5473\uff0c\u800c\u4e0d\u662f\u5355\u7eaf\u4e3a\u4e86\u6d17\u53bb\u8336\u53f6\u4e0d\u536b\u751f\u7684\u4e1c\u897f\u3002\u7b2c\u4e00\u6ce1\u8336\u7684\u6709\u6548\u6210\u5206\u8f83\u591a\uff0c\u5982\u8336\u591a\u915a\u3001\u6c28\u57fa\u9178\u3001\u919a\u6d78\u51fa\u7269\u7b49\uff0c\u4e0d\u4f46\u5bf9\u4eba\u4f53\u5065\u5eb7\u6709\u76ca\uff0c\u800c\u4e14\u5c3d\u663e\u8336\u7684\u7f8e\u5473\u3002<br \/>  The first infusion is to steep, to allow the tea leaves to stretch out, speed up the process of dissolving, and to make the drinker smell the aroma of tea leaves, not o<em><\/em>nly for washing away impurities. The resulting tea co<em><\/em>ntains lots of active ingredients, such as tea polyphenols, amino acids, and ether extracts, which are not o<em><\/em>nly beneficial for your health, but also result in the flavor of the tea.<br \/>  \u6839\u636e\u6709\u5173\u5b9e\u9a8c\uff0c\u8336\u7684\u9999\u5473\u548c\u6709\u76ca\u4eba\u4f53\u7684\u6210\u5206\u5728\u7b2c\u4e00\u6ce1\u540e3\u79d2\u5373\u5f00\u59cb\u6d78\u51fa\uff0c\u82e5\u8d85\u8fc73\u79d2\u949f\u5012\u6389\u8336\u6c34\uff0c\u4e0a\u8ff0\u8336\u4e2d\u7684\u6709\u6548\u6210\u5206\u5c31\u4f1a\u5927\u91cf\u635f\u5931\u3002\u6240\u4ee5\uff0c&ldquo;\u6d17\u8336&rdquo;\u7528\u8bed\u5b9c\u4fee\u6b63\u4e3a&ldquo;\u6d78\u8336&rdquo;\u6216&ldquo;\u6e29\u8336&rdquo;\u8f83\u4e3a\u786e\u5207\u548c\u79d1\u5b66\u3002<br \/>  An experiment showed that the aroma and healthful ingredients of tea begin to dissolve in water after 3 seco<em><\/em>nds upon the first infusion, and that the said active ingredients will be lost if the first infusion is not poured out within 3 seconds.
