It was named after a court official, Ding Baozhen, in the late Qing Dynasty (1616-1911). The dish features fresh, tender, spicy, savory, a little sweet and sour.<br \/>  \u4e01\u5b9d\u6862\u662f\u8d35\u5dde\u5e73\u8fdc\uff08\u4eca\u7ec7\u91d1\uff09\u4eba\uff0c\u6e05\u54b8\u4e30\u8fdb\u58eb\uff0c\u8bb2\u7a76\u70f9\u8c03\uff0c\u4efb\u5c71\u4e1c\u5de1\u629a\u65f6\uff0c\u66fe\u96c7\u7528\u540d\u53a8\u6570\u5341\u4eba\u4e3a\u5bb6\u53a8\uff0c\u8bf7\u5ba2\u65f6\u5e38\u6709&ldquo;\u7092\u9e21\u4e01&rdquo;\u4e00\u83dc\u3002\u540e\u8c03\u4efb\u56db\u5ddd\u603b\u7763\uff0c\u4fbf\u5c06\u6b64\u83dc\u5f15\u8fdb\u56db\u5ddd\uff0c\u4e0e\u56db\u5ddd\u55dc\u8fa3\u7684\u4e60\u4fd7\u76f8\u7ed3\u5408\uff0c\u5e76\u52a0\u4ee5\u6539\u8fdb\uff0c\u4ee5\u6b64\u5bb4\u5ba2\uff0c\u500d\u53d7\u6b22\u8fce\u3002\u540e\u70f9\u5236\u65b9\u6cd5\u6cc4\u9732\u51fa\u53bb\uff0c\u4e3a\u9910\u9986\u91c7\u7eb3\u7ecf\u8425\u3002\u4e01\u5b9d\u6862\u66fe\u88ab\u6e05\u671d\u5c01\u4e3a\u592a\u5b50\u5c11\u4fdd\uff08\u5c0a\u79f0\u5bab\u4fdd\uff09\uff0c\u6b64\u83dc\u88ab\u4eba\u547d\u540d\u4e3a&ldquo;\u5bab\u4fdd\u9e21\u4e01&rdquo;\u3002\u73b0\u5df2\u98ce\u9761\u5168\u56fd\u3002\u5404\u5730\u7684\u54c1\u79cd\u7565\u6709\u5dee\u5f02\uff0c\u5e76\u6709\u5c06\u9e21\u4e01\u6f14\u5316\u4e3a\u8089\u4e01\u7684\u5bab\u4fdd\u8089\u4e01\u7b49\u3002<br \/>  Ding Baozhen, a native of Pingyuan (today&rsquo;s Zhijin), Zuizhou Province, became a Jinshi (a third degree candidate in the natio<em><\/em>nal civil service examination) during the reign of Emperor Xianfeng. Legend has it that Ding Baozhen was a gourmet, relishing &ldquo;stir-fried diced chicken&rdquo; in particular, and he often treated his guests with this dish. While he served as governor in Shandong, he hired a dozen of famous cooks as his family cooks. While he served as governor in Sichuan, wher the local people liked hot chilies, he improved his favorite dish &ldquo;stir-fried diced chicken&rdquo; by adding chili pepper as an ingredient. As a result, the dish with its spicy flavor tasted even more delicious. Later, the recipe was leaked and restaurants started to serve the dish. Since Ding was later granted the title Taizi Shaobao, which literally means &ldquo;Protector of the Crown Prince&rdquo;, by the imperial court, he was also referred to as Kung Pao, which was short for Taizi Shaobao. Because of Ding Baozhen, people named his favorite dish Kung Pao Chicken. Now the dish has become very popular all around China. The way of cooking and the taste of the dish may vary in different provinces. Some even invented a new dish called Kung Pao Pork by replacing chicken with pork.<br \/>  \u7279\u8272\uff1a<br \/>  Features<br \/>  \u9c9c\u9999\u7ec6\u5ae9\uff0c\u8fa3\u800c\u4e0d\u71e5\uff0c\u7565\u5e26\u751c\u9178\u5473\u9053\u3002<br \/>  Fresh, tender, spicy, savory, a little sweet and sour<br \/>  \u539f\u6599\uff1a<br \/>  Ingredients<br \/>  \u9e21\u812f\u8089250\u514b\uff0c\u82b1\u751f\u7c73150\u514b\uff0c\u6cb9500\u514b\uff08\u5b9e\u801775\u514b\uff09\uff0c\u9e21\u86cb\u6e051\u53ea\uff0c\u5e72\u6dc0\u7c8912\u514b\uff0c\u76d02\u514b\uff0c\u5473\u7cbe1\u514b\uff0c\u9171\u6cb910\u514b\uff0c\u7cd610\u514b\uff0c\u5e72\u7ea2\u8fa3\u69122\u53ea\uff0c\u8471\u3001\u59dc\u672b\u54042\u514b\uff0c\u6e05\u6c6450\u514b\uff0c\u6599\u91525\u514b\uff0c\u9ebb\u6cb95\u514b\u3002<br \/>  250g chicken breast, 150g peanuts, 500g oil (425g can be reused), 1 egg (o<em><\/em>nly the egg white will be used), 12g dry starch, 2g salt, 1g MSG, 10 g soy sauce, 10g sugar, 2g dry red pepper, 2g chopped green onions, 2g chopped ginger, 50g clear soup, 5g cooking wine, 5g sesame oil.<br \/>  \u5236\u4f5c\u65b9\u6cd5\uff1a<br \/>  Preparation Procedures:<br \/>  1. \u5c06\u9e21\u812f\u8089\u62cd\u677e\uff0c\u523b\u4e0a\u5341\u5b57\u82b1\u5200\uff0c\u5207\u62101.5\u5398\u7c73\u89c1\u65b9\u7684\u4e01\uff0c\u653e\u5165\u7897\u5185\uff0c\u52a0\u5165\u9e21\u86cb\u6e05\u3001\u76d02\u514b\u3001\u5e72\u6dc0\u7c8910\u514b\u6405\u62cc\u4e0a\u6d46\u3002\u4f59\u4e0b\u6dc0\u7c89\u7528\u6c34\u5316\u5f00\u5907\u7528\u3002\u82b1\u751f\u7c73\u53bb\u76ae\u540e\u5165\u6cb9\u9505\u7092\u719f\u3002\u5e72\u7ea2\u8fa3\u6912\u5207\u6210\u957f1\u5398\u7c73\u957f\u7684\u6bb5\u3002<br \/>  1. Wash the chicken breast until clean, slap it gently with the back of a knife to make the meat soft. Cut it into small 1.5cm cubes, and put them in a bowl. Add the egg white, 10g dry starch and 2g salt into the bowl, and mix well. Dissolve the rest of the starch into water and stir well. Peel the peanuts and stir-fry them until done. Cut the dried red chilies into 1cm pieces.<br \/>  2\uff0e\u7092\u9505\u7f6e\u65fa\u706b\u4e0a\u70e7\u70ed\uff0c\u653e\u5165\u6cb9\uff0c\u70e7\u81f3\u56db\u6210\u70ed\u65f6\uff0c\u653e\u5165\u6d46\u597d\u7684\u9e21\u4e01\u6ed1\u7092\u81f3\u65ad\u751f\uff0c\u5012\u5165\u6f0f\u52fa\u4e2d\uff0c\u63a7\u51c0\u6cb9\u3002<br \/>  2. Heat the wok over big flame; add oil into the wok until 40% heat. Stir-fry the diced chicken until it is cooked. Place the chicken into a strainer and drain out the oil.<br \/>  3\uff0e\u9505\u5185\u7559\u6cb925\u514b\u70e7\u70ed\uff0c\u653e\u5165\u8471\u59dc\u672b\u3001\u5e72\u7ea2\u8fa3\u6912\u7178\u7092\u51fa\u9999\u5473\uff0c\u653e\u5165\u6e05\u6c64\u3001\u6599\u9152\u3001\u9171\u6cb9\u3001\u7cd6\u3001\u5473\u7cbe\u70e7\u5f00\u540e\uff0c\u7528\u6e7f\u6dc0\u7c89\u52fe\u82a1\uff0c\u5012\u5165\u7092\u597d\u7684\u9e21\u4e01\u53ca\u82b1\u751f\u7c73\uff0c\u7ffb\u7092\u5747\u5300\uff0c\u6dcb\u4e0a\u9ebb\u6cb9\uff0c\u88c5\u76d8\u5373\u6210\u3002<br \/>  3. Leave 25g oil in the wok and heat the oil; add the dried red chilies, chopped ginger, chopped spring o<em><\/em>nion and stir-fry until the spicy flavor develops. Now put the clear soup, cooking wine, soy sauce, sugar and MSG into the wok and bring it to boil. Pour in the starch solution. Then add the cooked chicken, peanuts and stir-fry well.
