It gained popularity and became nationally known. In the past 100 years or so, this dish has been favored by domestic and international visitors.<\/div>\n<div>\u9053\u53e3\u7684\u70e7\u9e21\u662f\u9053\u53e3\u9547\u4e00\u9053\u4f20\u7edf\u83dc\u80b4\u3002\u5728\u8fc7\u53bb\u7684100\u5e74\u91cc\uff0c\u9053\u53e3\u4e94\u9999\u8131\u9aa8\u70e7\u9e21\u5df2\u7ecf\u4e3e\u4e16\u95fb\u540d\uff0c\u4eab\u8a89\u56fd\u5185\u5916\u3002<\/div>\n<\/p>\n<p><div>Daokou Town in Northern Henan Province&rsquo;s Hua County has always been hailed as the home of braised chicken. Lu De, an ethnically Chinese restaurant manager in America, who once tasted Daokou Braised Chicken, put it that this dish has bright color, good flavor, fresh meat, fat chicken, but no greasy taste; bones and chicken separate so easily after shaken being gently by a hand that diners do not need knives; it is very delicious no matter whether it is hot or cold; I covet the dish even today.<\/div>\n<div>\u8c6b\u5317\u6ed1\u53bf\u9053\u53e3\u9547\uff0c\u7d20\u79f0\u70e7\u9e21\u4e4b\u4e61\u3002\u7f8e\u56fd\u4e00\u5bb6\u9910\u5385\u7684\u534e\u4eba\u7ecf\u7406\u9646\u5fb7\uff0c\u66fe\u54c1\u5c1d\u8fc7\u9053\u53e3\u70e7\u9e21\uff0c\u4ed6\u8d5e\u7f8e\u9053\u53e3\u70e7\u9e21\u80a5\u800c\u4e0d\u817b\uff0c\u8272\u9c9c\u5473\u7f8e\uff0c\u98df\u7528\u52ff\u9700\u5200\uff0c\u7528\u624b\u4e00\u6296\uff0c\u9aa8\u8089\u81ea\u884c\u5206\u79bb\u3002\u65e0\u8bba\u51b7\u70ed\uff0c\u5747\u4f59\u9999\u6ee1\u53e3\u3002\u81f3\u4eca\u56de\u5473\u8d77\u6765\uff0c\u72b9\u5782\u6d8e\u4e09\u5c3a\u3002<\/div>\n<\/p>\n<p><div>Daokou Braised Chicken has a history of more than three hundred years. The originator is Zhang Bing. He opened a small braised chicken restaurant on Daokou Town&rsquo;s Daji Street, which had few frequenters due to improper cooking method. One day, Zhang&rsquo;s old friend who had worked in the imperial kitchen came over to Zhang&rsquo;s place. The two were reuniting after a long separation. They talked and drank. Zhang asked his talented friend for help. The latter said, &ldquo;Eight ingredients and soup stock make delicious braised chicken.&rdquo; The eight ingredients are dried tangerine peel, cinnamon, cardamom, galangal, clove, fructus amomi, Amomum tsaoko, and radix angelicae; soup stock is concentrated chicken broth. Zhang followed his friend&rsquo;s word and made very delicious braised chicken. From then on, Zhang&rsquo;s restaurant business became brisk. Zhang named his restaurant Yixingzhang. <\/div>\n<div>\u9053\u53e3\u70e7\u9e21\u5df2\u6709\u4e09\u767e\u591a\u5e74\u7684\u5386\u53f2\u4e86\uff0c\u521b\u59cb\u4eba\u53eb\u5f20\u70b3\u3002\u4ed6\u5728\u9053\u53e3\u9547\u5927\u96c6\u8857\u5f00\u4e86\u4e2a\u5c0f\u70e7\u9e21\u5e97\uff0c\u56e0\u5236\u4f5c\u4e0d\u5f97\u6cd5\uff0c\u751f\u610f\u8427\u6761\u3002\u6709\u4e00\u5929\u4e00\u4f4d\u66fe\u5728\u6e05\u5bab\u5fa1\u81b3\u623f\u5f53\u8fc7\u5fa1\u53a8\u7684\u8001\u670b\u53cb\u6765\u8bbf\uff0c\u4ed6\u8eab\u6000\u7edd\u6280\u3002\u4e24\u4eba\u4e45\u522b\u91cd\u9022\uff0c\u5bf9\u996e\u7545\u8c08\u3002\u5f20\u70b3\u5411\u4ed6\u6c42\u6559\uff0c\u90a3\u670b\u53cb\u4fbf\u544a\u8bc9\u4ed6\u4e00\u4e2a\u79d8\u65b9\uff1a&ldquo;\u8981\u60f3\u70e7\u9e21\u9999\uff0c\u516b\u6599\u52a0\u8001\u6c64\u3002&rdquo;\u516b\u6599\u5c31\u662f\u9648\u76ae\u3001\u8089\u6842\u3001\u8c46\u853b\u3001\u826f\u59dc\u3001\u4e01\u9999\u3001\u7802\u4ec1\u3001\u8349\u679c\u548c\u767d\u82b7\u516b\u79cd\u4f50\u6599\uff1b\u8001\u6c64\u5c31\u662f\u716e\u9e21\u7684\u9648\u6c64\u3002\u6bcf\u716e\u4e00\u9505\u9e21\uff0c\u5fc5\u987b\u52a0\u4e0a\u5934\u9505\u7684\u8001\u6c64\uff0c\u5982\u6b64\u6cbf\u88ad\uff0c\u8d8a\u8001\u8d8a\u597d\u3002\u5f20\u70b3\u5982\u6cd5\u70ae\u5236\uff0c\u505a\u51fa\u7684\u9e21\u679c\u7136\u9999\u3002\u4ece\u6b64\uff0c\u8425\u4e1a\u5174\u65fa\uff0c\u5f20\u70b3\u628a\u4ed6\u7684\u70e7\u9e21\u5e97\u5b9a\u540d\u4e3a&ldquo;\u4e49\u5174\u5f20&rdquo;\u3002<\/div>\n<\/p>\n<p><div>After the branding of Yixingzhang, Zhang Bing practiced and practiced and became very experienced at selection, killing, propping up, and cooking of chicken, application of chicken broth and duration and intensity of heating. He only selected chicken less than two years old to ensure the quality of chicken. Before killing the selected chicken, it was allowed to relax and recover its normal physiological functions, which facilitated bleeding and color-maintenance when killed. Matching of ingredients and cooking were key procedures. Put fried chicken in a pot, add soup stock and other ingredients, boil the soup at high heat, and simmer it with low heat. The shape of the braised chicken was unconventional and pleasant. After disembowelment, the chicken was propped up inside by a section of a broomcorn stalk, forming a half-round shape with pointy ends.
