“\u6c34\u5e2d”\u662f\u6d1b\u9633\u7279\u6709\u7684\u5730\u65b9\u98ce\u5473\u83dc\u80b4\uff0c\u5b83\u98ce\u5473\u72ec\u7279\uff0c\u9009\u6599\u5341\u5206\u8bb2\u7a76\uff0c\u70f9\u5236\u8ba4\u771f\u7cbe\u7ec6\uff0c\u5473\u9053\u9c9c\u7f8e\u591a\u6837\uff0c\u53e3\u611f\u8212\u9002\u723d\u5229\uff0c\u548c\u9f99\u95e8\u77f3\u7a9f\u3001\u6d1b\u9633\u7261\u4e39\u5e76\u79f0\u6d1b\u9633\u4e09\u7edd\u3002\u662f\u4e2d\u56fd\u8fc4\u4eca\u6240\u4fdd\u7559\u4e0b\u6765\u7684\u5386\u53f2\u6700\u4e45\u8fdc\u7684\u540d\u7b73\u4e4b\u4e00\uff0c\u8ddd\u4eca\u5df2\u6709\u4e00\u5343\u591a\u5e74\u7684\u5386\u53f2\u3002<\/p>\n

Shui Xi, or Water Banquet, is a set of dishes in Luoyang. With carefully seleced materials, strict cooking procedures, diverse dishes, and unique flavors, the Water Banquet is co<\/em>nsidered one of the Three Wo<\/em>nders of Luoyang, with the other two being the Luoyang peony and the Lo<\/em>ngmen Grottoes. It is one of the famous existent Chinese banquets and boasts a history of over one thousand years.<\/p>\n

\u4f20\u8bf4\u968b\u5510\u65f6\u671f\uff0c\u4e3a\u83b7\u53d6\u4e0a\u6d41\u793e\u4f1a\u7684\u652f\u6301\uff0c\u50e7\u5c3c\u4eec\u6f5c\u5fc3\u7814\u5236\u7cbe\u7f8e\u7684\u7d20\u98df\u658b\u996d\uff0c\u6b3e\u5f85\u9887\u6709\u5730\u4f4d\u7684\u65bd\u4e3b\u3002\u738b\u516c\u8d35\u65cf\u5403\u817b\u4e86\u9e21\u9e2d\u9c7c\u8089\u5c71\u73cd\u6d77\u5473\uff0c\u4e4d\u5403\u7d20\u98df\uff0c\u500d\u89c9\u6e05\u723d\uff0c\u5473\u9053\u65b0\u9c9c\uff0c\u4e8e\u662f\u8fd9\u7d20\u98df\u6c64\u83dc\u548c\u5236\u4f5c\u65b9\u6cd5\u88ab\u5e26\u5165\u5bab\u4e2d\uff0c\u4f20\u64ad\u5230\u4e0a\u6d41\u793e\u4f1a\uff0c\u7ecf\u8fc7\u6539\u8fdb\u52a0\u5de5\uff0c\u914d\u4e0a\u5c71\u73cd\u6d77\u5473\uff0c\u5f00\u59cb\u767b\u4e0a\u5bab\u5ef7\u548c\u5b98\u573a\u7684\u5927\u96c5\u4e4b\u5802\u3002\u968f\u540e\u4e00\u4e9b\u8bb2\u7a76\u6392\u573a\uff0c\u6446\u9614\u6c14\u7684\u5eb6\u6c11\u767e\u59d3\u53c8\u628a\u8fd9\u7d20\u98df\u8364\u505a\u7684\u6c64\u83dc\u642c\u5230\u6c11\u95f4\u7684\u7b73\u5e2d\u4e0a\uff0c\u8fd9\u5c31\u662f\u6d1b\u9633\u6c34\u5e2d\u7684\u8d77\u6e90\u548c\u96cf\u5f62\u3002<\/p>\n

It is said that in the Sui and Tang Dynasties, in order to obtain spo<\/em>nsorship from the aristocracy, Buddhist mo<\/em>nks and nuns were devoted to the development of exquisite vegetarian dishes to entertain aristocratic donors. Bored with delicacies of various meats, the aristocratic do<\/em>nors found the vegetarian dishes refreshing. Then the recipes of the vegetarian dishes were brought to the imperial palace. After improvement and alteration, the vegetarian dishes were put on the tables of the court and the official circles together with other delicacies. Later, the common people who like to parade their wealth brought the vegetarian dishes to banquets for the common people. This is how the Water Banquet came into being.<\/p>\n

\u6240\u8c13“\u6c34\u5e2d”\uff0c\u6709\u4e24\u5c42\u542b\u4e49\u3002\u4e00\u662f\u4ee5\u6c64\u6c34\u89c1\u957f\uff0c\u4e8c\u662f\u5403\u4e00\u9053\u6362\u4e00\u9053\uff0c\u4e00\u9053\u9053\u4e0a\uff0c\u50cf\u6d41\u6c34\u4e00\u822c\uff0c\u6545\u540d“\u6c34\u5e2d”\u3002<\/p>\n

There are two reasons for the name Water Banquet. One is that all the dishes are soupy. The other reason lies in the serving procedure. The dishes are served and then removed in order from the beginning to the end. The dishes are served o<\/em>nly when the previous one is finished and removed, simulating the stream-like processing. The procedure is as smooth as flowing water.<\/p>\n

\u6d1b\u9633\u6c34\u5e2d\u5168\u5e2d\u4e8c\u5341\u56db\u9053\u83dc\uff0c\u5373\u516b\u4e2a\u51b7\u76d8\u3001\u56db\u4e2a\u5927\u4ef6\u3001\u56db\u4e2a\u538b\u684c\u83dc\u3002\u5176\u4e0a\u83dc\u987a\u5e8f\u662f\uff1a\u5e2d\u9762\u4e0a\u5148\u6446\u56db\u8364\u56db\u7d20\u516b\u51c9\u83dc\uff0c\u63a5\u7740\u4e0a\u56db\u4e2a\u5927\u83dc\uff0c\u6bcf\u4e0a\u4e00\u4e2a\u5927\u83dc\uff0c\u5e26\u4e24\u4e2a\u4e2d\u83dc\uff0c\u540d\u66f0“\u5e26\u5b50\u4e0a\u671d”\u3002\u7b2c\u56db\u4e2a\u5927\u83dc\u4e0a\u751c\u83dc\u751c\u6c64\uff0c\u540e\u4e0a\u4e3b\u98df\uff0c\u63a5\u7740\u56db\u4e2a\u538b\u684c\u83dc\uff0c\u6700\u540e\u9001\u4e0a\u4e00\u9053“\u9001\u5ba2\u6c64”\u3002\u4e8c\u5341\u56db\u9053\u8fde\u83dc\u5e26\u6c64\uff0c\u7ae0\u6cd5\u6709\u5e8f\uff0c\u6beb\u4e0d\u7d0a\u4e71\u3002<\/p>\n

There are in total 24 dishes, namely 8 cold dishes, 4 big dishes, 8 smaller dishes, and 4 end dishes. First, 8 cold dishes, which includes 4 vegetable dishes and 4 meat dishes, are served as accompaniments to drinks. Then the 4 big dishes and 8 smaller dishes are served. These 12 dishes are divided into 4 groups, and each group co<\/em>ntains 3 dishes. There is a big dish in each group, followed by two smaller dishes as side dishes. This is called "going to empire court with sons". The fourth big dish is sweet vegetable and sweet soup, followed by rice or noodles. At last, four "end dishes" are served. The last end dish is the Farewell Soup, indicating all dishes have been served. The dishes are always served exactly in this order.<\/p>\n

“\u771f\u547d\u5929\u5b50\u5047\u71d5\u7a9d”\uff0c\u8fd9\u6307\u7684\u662f\u6c34\u5e2d\u7684\u53e6\u4e00\u7279\u70b9——\u7d20\u83dc\u8364\u505a\uff0c\u4ee5\u5047\u4ee3\u771f\u3002\u6c34\u5e2d\u4e2d\u6709\u540d\u7684“\u6d1b\u9633\u71d5\u83dc”\u3001“\u5047\u6d77\u53c2”\u7b49\uff0c\u90fd\u662f\u6c11\u95f4\u666e\u901a\u7684\u841d\u535c\u3001\u7c89\u6761\u3001\u4f46\u7ecf\u53a8\u5e08\u5999\u624b\u70f9\u5236\u540e\uff0c\u4fbf\u8131\u80ce\u6362\u9aa8\uff0c\u552f\u7f8e\u5f02\u5e38\uff0c\u5982\u5947\u82b1\u7efd\u653e\uff0c\u8ba9\u4eba\u53eb\u7edd\u3002<\/p>\n

The saying “predestined emperor and fake swallow’s nest” implies that the Water Banquet includes fake meat dishes cooked with vegetables. The famous Luoyang Nest, Fake Sea Cucumber and so on are made of turnip, vermicelli and other ordinary materials which take stunning shape after being processed and cooked by cooks with their superb skills.<\/p>\n

\u5728\u6c34\u5e2d\u4e0a\uff0c\u7231\u5403\u51b7\u98df\u7684\u4eba\u53ef\u4ee5\u627e\u5230\u9002\u5408\u81ea\u5df1\u7684\u51c9\u83dc\uff0c\u7231\u5403\u9178\u8fa3\u83dc\u7684\u4eba\uff0c\u6c34\u5e2d\u83dc\u80fd\u8ba9\u4f60\u8fa3\u7684\u5192\u6c57\uff0c\u9178\u7684\u751f\u6d25\u3002\u6709\u4eba\u559c\u98df\u751c\u98df\uff0c\u7b2c\u56db\u7ec4\u83dc\u8db3\u4ee5\u8ba9\u4eba\u5403\u5f97\u53ef\u53e3\u3002\u6c34\u5e2d\u72ec\u5230\u4e4b\u5904\u662f\u6c64\u6c34\u591a\uff0c\u8d74\u5bb4\u4eba\u83dc\u6c64\u4ea4\u66ff\u98df\u7528\uff0c\u80fd\u4f7f\u4eba\u611f\u5230\u80a0\u80c3\u8212\u9002\uff0c\u83dc\u867d\u591a\u80c3\u53e3\u4e0d\u817b\u3002\u770b\u5230\u9e21\u86cb\u6c64\u4e0a\u684c\uff0c\u4e86\u89e3\u5f53\u5730\u98ce\u4fd7\u7684\u4eba\u90fd\u77e5\u9053\uff0c24\u9053\u83dc\u5df2\u5168\u90e8\u4e0a\u5b8c\uff0c\u8fd9\u7897\u9001\u5ba2\u6c64\u8bf4\u660e\u6c34\u5e2d\u5230\u4e86\u5c3e\u58f0\uff0c\u5bbe\u4e3b\u7686\u5927\u6b22\u559c\uff0c\u7eb7\u7eb7\u8d77\u8eab\u79bb\u5e2d\u3002<\/p>\n

At the banquet, people who love cold food will find desirable cold dishes; sour and spicy dish lovers will find themselves sweating; and the sweet-toothed will love the fourth group of dishes. The Water Banquet is featured by soups. With vegetable and soup in turn, guests will feel comfortable. When the egg soup, the Farewell Soup, is served, guests familiar with local custom know all dishes have been served and the banquet has come to its end, and they will leave the table contentedly.<\/p>\n

\u6709\u4eba\u8bf4\u6d1b\u9633\u6c34\u5e2d\u7684\u6c64\uff0c\u5c31\u50cf\u4e00\u6bb5\u8212\u7f13\u6709\u81f4\u7684\u97f3\u4e50\uff0c\u5f00\u59cb\u65f6\u5473\u9053\u6de1\u6de1\u7684\uff0c\u7136\u540e\u52a0\u8fdb\u70b9\u9ebb\u8fa3\uff0c\u518d\u52a0\u7cd6\u53d8\u6210\u751c\u54b8\u5473\uff0c\u518d\u6765\u918b\u7684\u9178……\u51e0\u7897\u4e4b\u540e\u53ea\u80fd\u7528“\u723d\u5feb”\u6765\u5f62\u5bb9\u3002<\/p>\n

As someone said, the soup of the Water Banquet is just like a piece of music; it tastes slight at first, then a little hot, a little spicy, and sweet, and sour… One can just describe it as “cool”.<\/p>\n

\u6d1b\u9633\u6c34\u5e2d\u4ee5\u5176\u72ec\u7279\u7684\u98ce\u5473\u3001\u7cbe\u6e5b\u7684\u6280\u827a\u3001\u903c\u771f\u7684\u9020\u578b\u3001\u7f8e\u597d\u7684\u4f20\u8bf4\u3001\u6e0a\u6e90\u7684\u6587\u5316\u79ef\u6dc0\u800c\u5f15\u8d77\u8f70\u52a8\uff0c\u88ab\u79f0\u4f5c\u6709\u6d1b\u9633\u53e4\u90fd\u5730\u65b9\u7279\u8272\u7684\u4e00\u6735\u5947\u8469\u3002<\/p>\n
