{"id":18733,"date":"2020-01-03T17:28:51","date_gmt":"2020-01-03T17:28:51","guid":{"rendered":"http:\/\/chinesemoment.com\/chinese-culture\/how-to-cook-beef-and-peppers-in-black-bean-sauce\/"},"modified":"2020-01-03T17:28:51","modified_gmt":"2020-01-03T17:28:51","slug":"how-to-cook-beef-and-peppers-in-black-bean-sauce","status":"publish","type":"post","link":"https:\/\/chinesemoment.com\/my\/how-to-cook-beef-and-peppers-in-black-bean-sauce\/","title":{"rendered":"How to cook Beef and Peppers in Black Bean Sauce"},"content":{"rendered":"<\/p>\n<p>  \tBeef and bell peppers are cooked with a savory black bean sauce in this Cantonese home-cooked dish.<\/p>\n<p>  \tServes 2 to 4<\/p>\n<p>  \tMain Chinese Recipes Index<br \/>  \tPrep Time: 35 minutes<\/p>\n<p>  \tCook Time: 15 minutes<\/p>\n<p>  \tTotal Time: 50 minutes<\/p>\n<p>  \tIngredients:<\/p>\n<p>  \t3\/4 pound steak (sirloin or flank is good), thinly sliced across the grain<br \/>  \tMarinade:<br \/>  \t1\/2 teaspoon sugar<br \/>  \t2 teaspoons soy sauce<br \/>  \t2 teaspoons Chinese rice wine or dry sherry<br \/>  \t1 1\/2 teaspoons cornstarch<br \/>  \t1 tablespoon vegetable oil, such as canola<br \/>  \tOther:<br \/>  \t2 bell peppers, 1 green and 1 orange or red<br \/>  \t1 small onion<br \/>  \t1 tablespoon Chinese fermented black beans or black bean sauce, or to taste<br \/>  \t2 cloves garlic<br \/>  \t2 large slices ginger<br \/>  \t4 tablespoons oil for stir-frying, or as needed<br \/>  \t1\/2 cup chicken stock or broth or water<br \/>  \tPreparation:<\/p>\n<p>  \tAdd the marinade ingredients to the beef and marinate for 25 to 30 minutes.<\/p>\n<p>  \tWhile the beef is marinating, prepare the vegetables. Remove the stems and seeds from the bell peppers and chop. Peel the onion and chop.<\/p>\n<p>  \tUse a cleaver or knife to chop the beans into tiny pieces. Finely chop the garlic and ginger. Mix the chopped garlic with the black beans.<\/p>\n<p>  \tHeat the wok over medium-high to heat heat. Add 2 tablespoons oil. When the oil is hot, add the beef. Brown briefly, then stir-fry until it changes color and is about 80 percent cooked. Remove the beef from the wok.<\/p>\n<p>  \tAdd 2 tablespoons oil. When the oil is hot, add the ginger and the garlic and bean mixture. Stir-fry briefly until aromatic. Add the onion. Stir-fry for about 3 minutes, then add the green pepper. Stir-fry for another minute, then add the remaining pepper.<\/p>\n<p>  \tPour in the chicken broth. Heat to boiling. Add the beef back into the pan. Reduce the heat and simmer, covered, for a few more minutes. Taste and season with salt, pepper or soy sauce if desired.
