Just as its name implies, the private home cuisine is privately made cuisine, specialty dishes that are cooked by the host and served in a private home. There is usually not a shop sign, no a fixed menu and no a full-time waiter or waitress in a private home restaurant. However, the cooking methods of these dishes are usually handed down from the ancestors and feature distinctive flavors. The supply of these dishes is limited and other restaurants in the market will not provide them. It is said that most of these kinds of restaurants originate from the mansions with spacious halls and large gardens of ancient times, which were located in remote areas. Each of them has its individual strengths and characteristics and they are all relatively low-key.
\u79c1\u623f\u83dc\u8d77\u6e90\u4e8e\u53e4\u65f6\u6df1\u5b85\u5927\u9662\u4e2d\u7684\u7f8e\u5473\u4f73\u80b4\uff0c\u5f53\u5e74\u9ad8\u5b98\u5de8\u8d3e\u4eec“\u5bb6\u84c4\u7f8e\u53a8\uff0c\u7ade\u6bd4\u6210\u98ce”\uff0c\u4e92\u76f8\u6500\u6bd4\u7740\u81ea\u5df1\u5728\u4eba\u751f\u7b2c\u4e00\u8981\u4e49“\u5403”\u4e0a\u9762\u7684\u54c1\u4f4d\u3002\u5728\u4ed6\u4eec\u7684“\u540d\u54c1”\u548c\u81ea\u5bb6\u7684\u540d\u53a8\u7684\u5171\u540c\u4f5c\u7528\u4e0b\uff0c\u4e00\u9053\u9053\u540d\u83dc\u4fbf\u4ea7\u751f\u4e86\uff0c\u7531\u4e8e\u6781\u5176\u5177\u6709\u81ea\u5bb6\u7279\u8272\uff0c\u56e0\u6b64\u5f62\u6210\u4e86\u79c1\u623f\u83dc\u3002
Private home cuisine originates from the delicious dishes of the mansions with spacious halls and extensive gardens of ancient times. In those days, senior officials and rich merchants “employed outstanding chefs and it was popular to compete in terms of decadence”, comparing their tastes in “eating” – the most im<\/em>portant thing in life which they shared in common. As a result of their “famous dishes” and “famous chefs”, renowned dishes were created in succession. As the dishes had strong individual features specific to their houses, private home kitchens came into being.
\u79c1\u623f\u83dc\u6700\u4e3a\u98ce\u884c\u65f6\uff0c\u5e94\u5c5e\u665a\u6e05\u548c\u6c11\u56fd\u65f6\u671f\uff0c\u5f62\u6210\u4e86\u597d\u51e0\u5927\u5bb6\u65cf\uff0c\u6709\u94b1\u529b\u4e5f\u6709\u7cbe\u529b\u53bb\u5f00\u53d1\u81ea\u5bb6\u7684\u79c1\u623f\u83dc\u3002\u90a3\u65f6\u5728\u5317\u4eac\u9664\u4e86“\u8c2d\u5bb6\u83dc”\u8fd8\u6709\u6bb5\u5bb6\u83dc\u3001\u4efb\u5bb6\u83dc\u3001\u738b\u5bb6\u83dc\u3002
Private home cuisine’s periods of greatest popularity were those of the late Qing Dynasty and the period of the Republic of China, when many large wealthy families had enough mo<\/em>ney and vitality to develop their own private home cuisine. At that time there were Tan’s Cuisine, Duan’s Cuisine, Ren’s Cuisine and Wang’s Cuisine in Beijing.
\u79c1\u623f\u83dc\u4e0d\u662f\u5927\u83dc\uff0c\u4e0d\u8fc7“\u5584\u70f9\u5c0f\u9c9c\uff0c\u53ef\u6cbb\u5927\u56fd”\u3002\u5176\u8d77\u6e90\u6709\u4e24\u79cd\u8bf4\u6cd5\uff0c\u4e00\u8bf4\u6e90\u4e8e\u6e05\u672b\uff0c\u6307\u7684\u662f\u5728\u5f88\u79c1\u5bc6\u7684\u81ea\u5bb6\u53a8\u623f\u91cc\u70ae\u5236\u51fa\u6765\u3001\u65e0\u5b97\u65e0\u6d3e\u7684\u83dc\u80b4\u3002\u5403\u79c1\u623f\u83dc\uff0c\u4e5f\u5c31\u662f\u5927\u5bb6\u6324\u5728\u4e00\u4e2a\u7c7b\u4f3c\u5bb6\u7684\u5730\u65b9\uff0c\u5403\u4e3b\u4eba\u7684\u62ff\u624b\u83dc\uff0c\u5e2d\u95f4\u6216\u5403\u7f62\uff0c\u4e3b\u4eba\u4f1a\u51fa\u6765\u5e94\u916c\u7247\u523b\uff0c\u51e0\u6b21\u4ea4\u9053\u6253\u4e0b\u6765\uff0c\u98df\u5ba2\u548c\u4e3b\u4eba\u5c31\u7ed3\u6210\u4e86\u597d\u53cb\u3002\u73b0\u5728\u8bb8\u591a\u540d\u83dc\u5176\u5b9e\u90fd\u662f\u4ece\u79c1\u623f\u83dc\u6f14\u53d8\u8fc7\u6765\u7684\uff0c\u6bd4\u5982\u8c2d\u5bb6\u83dc\u3001\u5b54\u5e9c\u83dc\u3001\u6bb5\u5bb6\u83dc\u7b49\u3002
Private home cuisines are uncomplicated, but it is said: “those who are good at making simple dishes are able to govern a large country”. There are two accounts on the origins of private home cuisine. One account is that private home cuisine originates from the late Qing Dynasty and refers to the dishes cooked in the kitchen of the private homes and cannot be classified as belo<\/em>nging to any particular school. To eat private home cuisine means that everyone crowds together in a place like a home and eats the specialty dishes made by the host. During the meal or after the meal, the host will chat with the guests for a moment. After coming into co<\/em>ntact with each other for several times, the guests and the host will become good friends. Many of the famous dishes of the present day have been developed form private home cuisines, such as the Tan’s Cuisine, the Co<\/em>nfucius Family dishes and Duan’s Cuisine etc.
\u53e6\u4e00\u79cd\u8bf4\u6cd5\uff0c\u79f0\u5176\u4e43\u5b98\u5e9c\u83dc\u7684\u4e00\u79cd\u5ef6\u4f38\u3002\u4ece\u524d\u5b98\u5e9c\u7684\u53a8\u5b50\uff0c\u5236\u4f5c\u83dc\u5f0f\u5747\u56f4\u7ed5“\u7ec6\u81f4”\u4e24\u4e2a\u5b57\uff0c\u73af\u8282\u76f8\u5f53\u4e4b\u7e41\u7f1b\u3002\u79bb\u5f00\u5e9c\u90b8\u540e\uff0c\u4ed6\u4eec\u6d41\u843d\u4e8e\u6c11\u95f4\uff0c\u6c11\u95f4\u7684\u5927\u6237\u4eba\u5bb6\uff0c\u5403\u996d\u540c\u6837\u8bb2\u7a76\u4e2a\u6c14\u6d3e\uff0c\u62e5\u6709\u5bb6\u53a8\uff0c\u5c24\u5176\u662f\u62e5\u6709\u5b98\u5e9c\u91cc\u51fa\u6765\u7684\u5bb6\u53a8\uff0c\u662f\u4ed6\u4eec\u8d22\u5bcc\u4e0e\u8eab\u4efd\u7684\u8c61\u5f81\u3002\u8fd9\u4e9b\u5bb6\u53a8\u5728\u5b98\u5e9c\u83dc\u7684\u5236\u4f5c\u57fa\u7840\u4e0a\uff0c\u4e3a\u8fce\u5408\u4e3b\u4eba\u7684\u53e3\u5473\uff0c\u8fdb\u4e00\u6b65\u5c06\u70f9\u996a\u6280\u672f\u878d\u4f1a\u53d1\u6325\u3002\u4e45\u800c\u4e45\u4e4b\uff0c\u81ea\u6210\u4e00\u79cd\u7c7b\u522b\u3002
According to another account, private home cuisine is an extension of the cuisine of Feudal Officials. In ancient times, chefs of feudal officials prized “particularity” in making dishes and culinary procedures were quite complicated. After leaving the feudal officials, they lived among the common people. The rich families uninvolved in government were also particular a<\/em>bout the flaunting of their wealth. They had their own chefs: chefs that had been those of feudal officials, in particular. Chefs are the symbol of wealth and status. Using the cooking methods of Feudal Official cuisine as a background, these chefs further fused cooking techniques together and developed them so as to cater to a host’s tastes. As time passed, these collections of dishes developed into new schools.
