The original distiller&rsquo;s yeast is made of the musty or germinant grain, mainly including wheat and rice. With the improvement of the musty grain, people made the distiller&rsquo;s yeast suitable for brewing. The distiller&rsquo;s yeast co<em><\/em>ntains filamentous fungus (mildew) which can make the starch diastatic and yeast which can help to make wine to make the raw sugar diastatic to ferment into wine. Due to different grain for distiller&rsquo;s yeast in the South and North, the varieties of the wine increased accordingly. By the Northern and Southern Dynasties (420-589), the technology of making distiller&rsquo;s yeast had reached a high level with 12 methods of making distiller&rsquo;s yeast recorded in the im<em><\/em>portant work of Qi Min Yao Shu at that time.<br \/>  \u8fd9\u662f\u4e00\u79cd\u81ea\u7136\u53d1\u9175\u7684\u65b9\u6cd5\uff0c\u5386\u7ecf\u6570\u5343\u5e74\uff0c\u53d1\u9175\u6280\u672f\u5df2\u76f8\u5f53\u6210\u719f\uff0c\u800c\u5236\u66f2\u917f\u9152\u6280\u672f\u7684\u57fa\u672c\u539f\u7406\u548c\u65b9\u6cd5\u81f3\u4eca\u4ecd\u5728\u4f7f\u7528\u3002\u5229\u7528\u8fd9\u79cd\u65b9\u6cd5\u917f\u9152\uff0c\u4e3b\u8981\u662f\u51ed\u501f\u7ecf\u9a8c\uff0c\u751f\u4ea7\u89c4\u6a21\u4e00\u822c\u4e0d\u5927\uff0c\u57fa\u672c\u662f\u624b\u5de5\u64cd\u4f5c\uff0c\u9152\u7684\u8d28\u91cf\u5e76\u6ca1\u6709\u4e25\u683c\u7684\u79d1\u5b66\u68c0\u6d4b\u6807\u51c6\u3002<br \/>  This is a natural fermentation method with thousands of years&rsquo; history. With mature brewing technology, the basic principle and method of such technology are still in use now.
