Literally translated, <\/span>baijiu (\u767d\u9152)<\/strong> <\/span>means “white alcohol” or “white spirits.” Weighing in at a highly potent 40-60 percent abv, those who have not spent a while acquiring the taste are certain to cringe after a single sip.<\/p>\n

It is no secret that drinking in China can get a little competitive, and with a bottle of baijiu lurking ominously on the table, caution is required. Traditionally, the drink is part an integral of business dealings. These business “meetings” may not include much in the way of hard negotiation, but you are being e<\/em>valuated on your capacity, literally, so keep up!<\/p>\n

Baijiu also finds its prestigious place in the arts as a muse. The great Chinese poet Li Bai included baijiu in his verses, such as in his poem, “Waking From Drunkenness on a Spring Day” (\u6625\u65e5\u9189\u8d77\u8a00\u5fd7). It ends as follows:<\/p>\n

\u611f\u77e5\u6b32\u53f9\u606f (Moved by its song I soon began to sigh),
\u5bf9\u9152\u8fd8\u81ea\u503e (and, as wine was there, I filled my own cup).
\u6d69\u6b4c\u5f85\u660e\u6708 (Wildly singing I waited for the moon to rise),
\u66f2\u5c3d\u5df2\u5fd8\u60c5 (when my song was over, all my senses had gone).<\/p>\n

Making its appearance at many the social occasion, there is no escaping the inevitable baijiu encounter. The pressure to partake is intense, especially for foreigners, so much so that presidential candidate Jon Huntsman, while US Ambassador to China, drank it, despite it being against his Mormon values.<\/p>\n

But who actually enjoys it? I certainly don’t. It is that last resort drink you have because you must. In Western circles, it is often scorned, and any Chinese person I have asked a<\/em>bout baijiu is quick to voice their dislike. I accept that many beverages are an acquired taste. Coffee, for example, requires five or six samplings and beer up to 10. In the case of baijiu, however, it reputedly takes 300 attempts for your taste buds to appreciate this Chinese nectar.<\/p>\n

Yet in 2010, around one billion, nine-liter cases of baijiu (that’s nine billion liters, roughly 1 1\/3 liters for every person in the world) were produced for consumption, according to the 2011 IWSR Baijiu Report.<\/p>\n

Somebody must be drinking it.<\/p>\n

Having lived in Beijing for several months, I have indulged in the spirit, I have resolved never to touch it again and, yet, I have found myself repeatedly wincing as baijiu burns its way down my esophagus. My friend and I partook in several experiments, mixing it with other spirits (in hindsight this was never going to work), treating it like absinthe (a highly flammable experiment) and even endeavoring to create the baijiu cocktail. Enthusiasm for finding a tolerable means of co<\/em>nsumption soon faded, our attempts crippled by its overpowering taste and its potency.<\/p>\n

There is hope, however. Let me return to the earlier mention of 300 shots and introduce China-ba<\/em>sed writer and editor, Derek Sandhaus. His blog 300 Shots at Greatness docu<\/em>ments his quest to find the baijiu-filled Holy Grail. This man may be a true hero.<\/p>\n

His plan: “Drink 300 shots of baijiu or die trying,” while providing recommendations, reviews, historical miscellanea and perso<\/em>nal experiences on his epic journey. The first tip is to snub those tempting RMB5 bottles that line the shelves of every co<\/em>nvenience store as, realistically, alcohol that cheap is never going to be good.<\/p>\n

So in the spirit of baijiu (excuse the pun), here is a list of recommendations from o<\/em>nline expert Derek Sandhaus:<\/p>\n

– For a strong aroma baijiu, try Jiannanchun (\u5251\u5357\u6625)<\/p>\n

– Erguotou (\u4e8c\u9505\u5934) is a good light aroma brand<\/p>\n

– The infamous Maotai Zhen (\u8305\u53f0\u9547) is a fine example of sauce aroma baijiu<\/p>\n

– Guilin Sanhua Jiu (\u6842\u6797\u4e09\u82b1\u9152 ) has a rice aroma<\/p>\n

– For a mixed aroma baijiu, opt for Xifengjiu (\u897f\u51e4\u9152)<\/p>\n

If you prefer the elegance of a cocktail glass the following two mixes, created by Beijing-ba<\/em>sed bartender and co-writer of the blog blood&sand Paul Matthew, a master of mixology and, perhaps, the keeper of the secret of the universe. You can be the judge.<\/p>\n

Hair of the Tiger<\/strong><\/p>\n

25ml Ergoutou baijiu<\/p>\n

30ml fresh pink grapefruit juice
15ml Triple Sec
5ml simple sugar syrup
5ml fresh lime juice
dash of citrus bitters<\/p>\n

Shake and single strain into glass, add final spray of citrus bitters to the surface of the drink.<\/p>\n

The Yellow Emperor<\/strong><\/p>\n

50ml Erguotou (Èrgu\u014dtóu)
Half a fresh passion fruit
20ml fresh lemon juice
15ml cherry brandy
10ml simple syrup (adjust according to acidity of passion fruit)<\/p>\n

Shake all ingredients hard over ice, fine strain into a chilled glass.<\/p>\n

So <\/span>ganbei <\/span><\/strong>(\u5e72\u676f) (Cheers, or literally “dry glass”) and remember, drink respo<\/em>nsibly and stock up on Lu Cha (Green Tea), the traditio<\/em>nal hangover cure*.<\/p>\n<\/div>\n
