To add a bit of color, try garnishing the cut chicken with Green Onion Brushes before serving.<\/p>\n<p>  \tPrep Time: 15 minutes<br \/>  \tCook Time: 5 hours<br \/>  \tTotal Time: 5 hours, 15 minutes<br \/>  \tIngredients:<\/p>\n<p>  \t1.6 kilogram, (3.5 lb) chicken<br \/>  \t3 spring onions (green onions, scallions)<br \/>  \t1 large ginger, sliced<br \/>  \t3 garlic cloves<br \/>  \t250 ml (1 cup) Shaoshing wine*<br \/>  \t1 tablespoon sea salt<\/p>\n<p>  \tPreparation:<br \/>  \tRinse the chicken under cold running water and pat dry. Trim any extra fat.<br \/>  \tIn a large saucepan, add enough water to cover the chicken. Add the spring onions, ginger, garlic, Shaoshing wine, and sea salt. Bring to a boil.<br \/>  \tSimmer for 20 minutes, then place the chicken in the stock. Bring back to a boil and simmer for another 15 minutes.<br \/>  \tTurn the heat off, cover, and let the chicken sit in the stock for 4 &#8211; 5 hours. Serves 4.<\/p>\n<p>  \tCut up the chicken. Serve with red vinegar, such as Pun Chun.<br \/>  \t*Shaoshing wine is Chinese rice wine.
