Ingredients:
500 grams (1.1 lb) self-rising wheat flour
250 grams (0.55 lb) minced pork
15 grams (1 2/3 tsp) soy sauce
5 grams (1 tbsp) sugar
3 grams (1/2 tsp) salt
2 grams (1/2 tsp) MSG
10 grams (2 tsp) sesame oil
3 grams (1/10 oz) finely cut scallions
3 grams (1/10 oz) chopped ginger
5 grams (1 tsp) cooking wine
Directions:
1. Add the soy sauce, sugar, salt, MSG, scallions, ginger, cooking wine and sesame oil with hte minced pork and well stir. Add 50 g (3 tbsp) of cold water to the mixture and stir in one direction till you feel the sense of elasticity.
2. Add 200 g (2/5 cup) of lukewarm water to mix the flour and leave it aside for an hour.
3. Shape the flour into a long strip and divide into small pieces each 25 g (5/6 oz) in weight. Press with a roller into round wrappings with the edge thinner than the center. Put in the filling and fold.
4. Put 2000 g (4 cups) of water in the steamer and when it boils, put in the dumplings. Steam on high heat for 15 minutes and they are ready to serve.
Features: Soft on the outside and tender and delicious inside.
