闽菜，即福建菜。福建省位于中国东南部，面临大海，背靠群山，气候温和，雨量充沛，四季如春。沿海地区海岸线漫长，海鲜佳品常年不绝。辽阔的江河平原，则盛产稻米、蔗糖、蔬菜、水果。福建人利用这些得天独厚的资源，烹制出珍馐佳肴，并逐步形成了别具一格的闽菜。 闽菜发源于福州，以福州菜为代表，狭义闽菜指的就是福州菜，福州菜代表闽菜的文化与时尚。在后来的发展中形成福州、闽南、闽西三种流派，即广义闽菜。福州菜淡爽清鲜，讲究汤提鲜，擅长各类山珍海味，闽南菜包括泉州、厦门、漳州一带，讲究佐料调味，重鲜香：闽西菜包括长汀及西南一带地方，偏重咸辣，烹制多为山珍，带有山区风味。因此，闽菜形成三大特色，一、长于红糟调味，二、长于制汤，三、长于使用糖醋。 汤是闽菜的精髓，素有一汤十变之说。据考证，福建人在5000多年前就有了吃海鲜和制作汤食的传统。福建一年四季如春，这样的气候适合做汤。 闽菜的著名菜肴有：佛跳墙、鸡汤氽海蚌，淡糟香螺片，荔枝肉，醉糟鸡等等。
