About Banku and kenkey

Banku and kenkey fit the definition of a dumpling in that they are starchy balls of dough that are steamed. They are formed from fermented(having undergone fermentation) cornmeal dough. Banku are boiled while kenkey are partly boiled then finished by steaming in banana leaves.

Flour food(面食miànshí) has been popular with the Chinese people since ancient times. Peking Duck of China 北京烤鸭

Clean the duck(鸭子yāzǐ). Wipe dry and tie string around neck. Hang duck in cool, windy place four hours. Fill large wok with water. Bring to boil. Add ginger,  scallion(青葱qīngcōng), honey, vinegar, and sherry. Bring to boil. Pour in dissolved cornstarch(starch prepared from the grains of corn; used in cooking as a thickener). Stir constantly.

On each side of the fish, make three diagonal(a diagonal line or movement goes in a sloping direction, for example, from one corner of a square across to the opposite corner) cuts 2 1/2 inches long and 1/2 inch deep. Stir the  marinade(腌泡汁yānpàozhī) ingredients in a small bowl, and spoon it over the fish, making sure it seeps into the cuts. Let the fish stand in the marinade, uncovered, at room temperature, for 1 hour.

Sweet Green Rice Ball甜绿饭团

The  sweet green rice ball(甜绿饭团tián lǜ fàntuán) is a  Qingming Festival(清明节Qīngmíng jié)(Tomb Sweeping Day) food popular in  Jiangsu(江苏Jiāngsū) andZhejiang(浙江Zhèjiāng) Provinces. It is also a must-have offering at ancestral rituals in the south of the  Yangtze River(长江Chángjiāng). The custom of making sweet green rice balls dates back to the  Zhou Dynasty(周朝Zhōucháo) over 2,000 years ago. One or two days before the Qingming Festival were designated as "cold food days", during which hot cooking is banned.
